Moisture and Density Measurement in Coffee Processing by the 2-Parameter Microwave Resonance Method

The moisture of the green, roasted, and ground beans in coffee processing is a very important factor in the production process. The requirement is for precise in-process measurement, taking the general conditions, such as high temperatures, into account.

With the 2-parameter microwave resonance method, Döscher enables fast and reliable determination of the water content of bulk goods such as coffee beans and ground coffee. The method is therefore suitable both for control and optimization of the production process and also for laboratories.

Moreover, the bulk density of ground coffee is determined to ensure filling occurs without any problems.

Moisture measurement with MoistureScan

Integrated in the production process, MoistureScan continuously monitors the water content. In the case of unroasted coffee beans, the measurement is for precise inspection of the supplied product. The values determined can be used as a data basis for settling up with the supplier. In the case of roasted and ground coffee, the measurements are not only used for quality in the production process but also to increase economic efficiency. Moisture values that are desired or prescribed by law are determined exactly and reliably maintained on a permanent basis.

The device has software that can be operated in an intuitive way with clear display of the moisture and temperature. Calibrations can be performed and visualized simply. Extensive evaluation options ensure control of production at all times.

MoistureScan is also available in the versions XT for product temperatures up to 140 °C and EX for areas with an explosion hazard.

Density measurement with DensityGuard

In ground coffee production, DensityGuard monitors the bulk density of the ground coffee in the product flow. If this is too high, the pack is not filled completely. If it is too low, the guaranteed quantity of coffee does not fit into the package and it cannot be closed.

The system enables precise and fast measurement of temperatures from 0 to 70°C, independently of the water content. A cavity sensor is continuously filled with ground coffee and automatically starts measuring as soon as a certain filling level is reached. Without interfering with the process, the sample is seamlessly returned to the product flow.

Application examples

A coffee processor has integrated MoistureScan into its production process to measure unroasted coffee beans in the moisture range from 9 to 14% in the product flow. Further measurement units inspect the water content of the roasted coffee beans (1 to 5%).

A leading coffee roaster in Germany is using DensityGuard. It measures the density of the coffee in a bypass downstream of the grinder. The values determined allow the grinder’s comparator to be adjusted immediately in order to react to changes in bulk density. This measuring system is particularly invaluable when the grinder is started up. The grinder settings can be monitored more quickly and adapted to new conditions.
